Berry mojito
A summer recipe from Green Cooks
Limes, berry and mint are a delicious combo – enough said.
Ingredients (makes 1 litre, serves 3-4)
- Juice of two limes
- 4 tbsp sweetener (honey, sugar syrup, agave)
- Large splash of rum extract (or non-alcoholic rum)
- 2 large handfuls of fresh or frozen berries
- 4 cups (1 litre) cold sparkling or tonic water
- 2 large handfuls of fresh mint leaves, chopped
To serve
- Handful of crushed ice
- Lime wedges
- Extra berries
METHOD
In a food processor or blender, add lime juice, sweetener, rum extract, berries and ¼ cup of water. Blend until combined. Pour through a strainer to remove pulp and press juice out with a spoon.
In a jug, add mint leaves and muddle with a cocktail muddler (or the back of a rolling pin) to bruise the mint and release flavour. Add a handful of crushed ice, fresh berries, lime wedges and berry juice. Top with cold sparkling or tonic water. Stir to combine.
