Banana flower salad recipe

Combine banana flowers, green mango, coriander, sesame seeds, beetroot and chilli powder to create a delicious salad alternative
Ingredients (serves 2)
- 80g banana flower
- 60g beetroot, cooked
- 70g green mango
- 70g wakame
- 3g coriander leaf, whole
- 3g mint leaf, whole
- 10g shallot, finely sliced
- 10ml lime juice
- 5g sesame seeds
- Dash of chilli powder
- 10g lemongrass, finely sliced
Method
Remove the hard outside layer of the banana flower and cut the inside flesh into fine strips. Slice the cooked beetroot and green mango into fine strips. Place all ingredients into a bowl and mix well. Taste to check and adjust the flavour before serving.
Place salad mix onto the centre of your serving plates and garnish with additional fresh coriander and mint leaves.
