Pack out your salads with a healthy dose of protein and some good quality fats in the form of nuts, seeds and oils. These ingredients contain healthy unsaturated fats including omega-3, omega-6 and omega-9. Omega-3 and omega-6 are two essential fatty acids (EFAs) that reduce inflammation, lower the risk of heart disease, maintain healthy cholesterol, decrease arthritis pain and maintain healthy brain function.
Quinoa lentil salad
1. Rinse and cook quinoa as you would rice. Cool.
2. Mix with salad ingredients from the options below:
3. Baby spinach leaves, rocket, alfalfa, green beans, snow peas, avocado, cucumber, bean shoots, shallots, capsicum, mushrooms, olives.
3. Add lentils (freshly cooked or canned), red onion, and a handful of diced feta cheese
Optional: Add pine or macadamia nuts; drizzle with flaxseed oil, apple cider vinegar and/or lemon juice.
