5-minute tuna & veg

Lillian Dikmans's 5 minute tuna and veg will take all the worries out of lunchtime feasts.
Ingredients (serves 1)
- Knob of organic butter (or olive oil)
- Large handful of frozen chopped spinach
- Large handful of frozen peas
- ½ cup frozen mashed sweet potato (or fresh)
- Sea salt
- Black pepper
- 1 can tuna in springwater or olive oil
Method
Fresh herbs and pumpkin seeds to serve (optional)
Heat butter (or olive oil) in a frypan over medium heat. Tip the frozen vegetables into the pan, adding a good pinch of sea salt and some cracked black pepper. Cook the vegetables until defrosted and warmed through. Drain tuna and add to the pan. Stir everything together. Serve in a bowl and top with fresh herbs and pumpkin seeds if desired.
