Another versatile spice to be used sparingly, which works equally well in savoury dishes as in sweet ones, Hamilton suggests adding cloves to your dessert. “Cloves have a very distinctive, warm, spicy, sweet aroma and taste,” she says. “Clove buds go really well in desserts with apples, plums or oranges, and of course cloves are one of the spices used to make mulled wine too.” Not to mention they are one of the ingredients in chai tea.
Cloves are usually best bought in ground form as they are difficult to grind at home and you don’t want to find chunks of clove in your ice-cream or biscuit as the flavour of a clove alone is extremely strong.
“Cloves have antibacterial, antivital, antiparasitic and fungicidal properties,” Hamilton adds. This makes them a common ingredient in mouth washes.
